Bob's Crispy Salami Eggs

My dad is the king of breakfast.
When I recently mentioned his legendary Salami and Eggs to a friend,
 I was shocked that she had never heard of the combination.
For our family, its a classic dish from a classy guy!


It is just 3 simple ingredients, 
(4 if you include butter in the pan)
farm fresh eggs, salami and basil...

The combination of fluffy, buttery eggs, crisp savory salami and fresh basil
 is as irresistible as Bob!

Bob's Crispy Salami Eggs
serves 2

4 eggs
1 Tablespoon butter
6-8 slices of salami cut into thin strips

Fry salami strips in a small pan over medium heat until crispy. Be careful as they tend to crisp up quickly.  Remove from pan and drain on a paper towel.  In a small bowl whisk the eggs and add salt and pepper.  In the same pan as you fried the salami, add butter and melt it slowly on low heat until frothy.  Pour in eggs and stir eggs with a rubber spatula until cooked.  Transfer to 2 plates, top with salami and garnish with basil.

Brussels Sprout Hash topped with Sunny-side up Eggs

Brussels sprouts for breakfast?
Yes and they are amazing!
My favorite way to serve this little green autumn veggie, 
is to saute them with a touch of butter and toss with crispy bacon or pancetta.
It's fabulous as a warm side dish or room temperature as a salad,
but topped with a cheery fried egg...
it's a hash.

Just wait until you bite into the egg and the yoke comes to life, 
the creamy, nutty, salty combination is amazing.
(my daughter, however prefers poached egg 
and my son, a "well done" egg as their toppers and they are just as good)

Brussels Sprout Hash
makes 2 large servings

10 ounces brussels sprouts, halved (about  12- 15 sprouts)
6 ounces pancetta (I buy mine already cut into tiny cubes) or bacon crumbled
2 tablespoons butter

In a large saute pan, cook pancetta until crisp.  Drain on a plate lined with paper towels and set aside. In the same pan (it is up to you if you leave the oil from the pancetta in it or not!) add butter and once it melts over medium heat, add brussels sprouts and saute until slightly golden and soft, about 8 to 10 minutes.  Add cooked pancetta to pan and gently mix until combined.  Transfer to plates and top with eggs of your preference.

I love witches.
I also love farm fresh eggs.

I'm combining the two and whipping up a little magic to give to friends.
An over easy way to cast a fun spell...

These bewitching eggs are so easy to assemble, 
it's scary.
Gather fresh eggs, egg cup holder, mini witches' hats and brooms.

Then dress them up and let the toil and trouble begin...

Aren't they boo-tiful?

Chicken and Waffles Breakfast


Want a cheery breakfast that will make you rise and smile?
Start your morning with Chicken and Waffles!
As cluck would have it, 
these are so quick and easy it won't ruffle your feathers at all...

A sunnyside up, chicken shaped egg, 
laid atop a golden brown, buttery waffle 
will get everyone dashing out of the coop and to the breakfast table...

All you need to hatch your own chicks is a small frying pan,
(mine is 5" in diameter)
a chicken shaped cookie cutter,
(mine is from here)
and jumbo size eggs.

Heat your pan, coated with olive oil or butter, on medium heat.
Place cookie cutter in pan, the carefully crack your egg into the cutter.  
If you are a perfectionist like me, while egg sets, you can move the pan slightly,
 so the yoke is near the center of the chicken 
and the whites are evenly distributed for the body and head of the bird.
Cook until the whites are set and the yolk is cooked to your liking.  
Press down on the cutter once it has cooled to get a good cut, then with a spatula, 
remove from pan and top your waffle.

Break out of your breakfast shell... 
Chicken and Waffles is an egg-cellent way to start the day.

Star Spangled and Scrambled Banners - Independence Day Breakfast

Farmer's Market Salad with Cage-Free Eggs...Give a Cluck!



We usually have one of our favorite salads on Sunday nights...

A simple salad, filled with weekend Farmer's Market finds...

and cage-free eggs...

  topped with a Shallot Dijon dressing.
It is the perfect compliment to whatever our main entree may be...

Our pledge to only use cage-free eggs
started after a trip to a friend's house a few summers ago.
There were baby chicks, lots of baby chicks.

We held them,

played with them,
and posed for pictures with them...
These fun and gorgeous chickens were living the good life in Napa Valley.
Free to frolic and play and their eggs were the best 
(and most beautiful)
 we had ever eaten.
It got me curious about the eggs we buy.

Most hens are not so lucky.
They live in tiny cages and are not able to move around and spread their wings.
Chickens are social animals, they love to spend time with other hens.
Did you know they have over 30 calls that they use to communicate with each other?
They thrive with a little freedom and care.
I want the eggs my family eats to come from healthy, happy, well treated chickens.
I know they taste better and there is a much lower risk of salmonella contamination.

Farmer's Market Salad 
with hard boiled cage-free eggs
Serves 4
(feel free to substitute any fresh produce you like!)
1 small head of butter lettuce
2 large handfuls of mixed field greens
5 small carrots, chopped
5 large radishes, chopped
1 large tomato, sliced
1 avocado, sliced
10 broccoli florets
3 green onions, chopped
3 cage-free eggs hard boiled, sliced

Shallot Dijon Dressing
in a mason jar, shake together:
2 Tablespoons shallots, finely diced
1 teaspoon dijon mustard
1/4 teaspoon anchovy paste
4 Tablespoons white wine vinegar
8 Tablespoons extra virgin olive oil
