Farmer's Market Salad with Cage-Free Eggs...Give a Cluck!



We usually have one of our favorite salads on Sunday nights...

A simple salad, filled with weekend Farmer's Market finds...

and cage-free eggs...

  topped with a Shallot Dijon dressing.
It is the perfect compliment to whatever our main entree may be...

Our pledge to only use cage-free eggs
started after a trip to a friend's house a few summers ago.
There were baby chicks, lots of baby chicks.

We held them,

played with them,
and posed for pictures with them...
These fun and gorgeous chickens were living the good life in Napa Valley.
Free to frolic and play and their eggs were the best 
(and most beautiful)
 we had ever eaten.
It got me curious about the eggs we buy.

Most hens are not so lucky.
They live in tiny cages and are not able to move around and spread their wings.
Chickens are social animals, they love to spend time with other hens.
Did you know they have over 30 calls that they use to communicate with each other?
They thrive with a little freedom and care.
I want the eggs my family eats to come from healthy, happy, well treated chickens.
I know they taste better and there is a much lower risk of salmonella contamination.

Farmer's Market Salad 
with hard boiled cage-free eggs
Serves 4
(feel free to substitute any fresh produce you like!)
1 small head of butter lettuce
2 large handfuls of mixed field greens
5 small carrots, chopped
5 large radishes, chopped
1 large tomato, sliced
1 avocado, sliced
10 broccoli florets
3 green onions, chopped
3 cage-free eggs hard boiled, sliced

Shallot Dijon Dressing
in a mason jar, shake together:
2 Tablespoons shallots, finely diced
1 teaspoon dijon mustard
1/4 teaspoon anchovy paste
4 Tablespoons white wine vinegar
8 Tablespoons extra virgin olive oil
