Skiers' Delight - Hot Cocoa Cocktail

Let it Snow, Let it Snow, Let it Snow!
Christmas Trees are decorated, warm coats and boots are donned, 
carolers are singing and it's time to hit the slopes.
My favorite part of skiing happens to be "apres" 
and this year we're celebrating a day on the mountain with 
a Skiers' Delight Hot Cocoa Cocktail...


Hot, sweet and creamy,
everyone will be racing to the lodge to get theirs...

Just a few simple ingredients are all you need to make the cocoa and the whipped cream topping.
I love using unsweetened dark chocolate chips and 
then adding Sweet 'N Low to my cocoa.
It is a zero calorie sweetener so
it adds just the right sweetness without the extra calories.
Even after a day of shredding down those hills, 
it is always great to cut back on calories wherever you can.

This warm cocktail gets kicked up just a notch
 with a touch of Baileys Irish Cream...

and then topped with fresh whipped cream 
mixed again with Sweet 'N Low for a kiss of sweetness...


then a dusting of coconut because a day of skiing is all about the "shred", right?

What time can I expect to see you at the bar?


Skiers' Delight Hot Cocoa Cocktail
serves 2
for the whipped cream
1 cup heavy whipping cream
2 packets Sweet 'N Low Sweetener

for the cocoa:
2 cups whole milk
1 cup unsweetened dark chocolate chips
2 ounces Baileys Irish Cream

shredded coconut for topping

Place whipping cream and Sweet 'N Low in a metal bowl and mix on high with an electric mixer with whisk attachment or hand mixer (or if you're really brave you can use a whisk and beat by hand). 
Mix until light and fluffy.

In a saucepan mix together milk, chips and Sweet 'N Low on medium to low heat until combined and chips are melted.  Remove from heat and add Baileys Irish Cream.

Pour into mugs and top with whipped cream and coconut.

Turkey Thyme Cocktail

Thanksgiving is here, 
a holiday filled with family, gratitude, special food and a festive cocktail!
I say it's Turkey Thyme...


I think this is the best time of year for a bourbon cocktail.
The vanilla, oak and caramel flavors complement the crisp cold weather, 
it just makes me think of turkey for some reason :)

This drink is easy to make with just a few simple ingredients.

But what makes it extra special is the
Thyme Simple Syrup... 

I love using Sweet 'N Low because it has zero calories, it adds the perfect sweetness without the extra calories, which is especially helpful with the holiday feasts and treats.
It is also diabetic friendly, so Uncle Paul can join in the Turkey Thyme Cocktail Toast.

Turkey Thyme Bourbon Cocktail
for 2 cocktails combine ingredients in a cocktail shaker filled with ice... shake until combined and serve with a fresh sprig of thyme either up or over ice

2 oz of your favorite Bourbon
2 oz water
squeeze of fresh lemon juice
2 Tablespoons of Thyme/Sweet 'N Low simple syrup 

Thyme-Sweet 'N Low Simple Syrup 
In a small sauce pan combine 1/2 cup water and 4 packets of Sweet 'N Low Sweetener and bring to a simmer. Add 3 to 4 sprigs of thyme and simmer on low approx 5 minutes. 
Remove from heat and cool. Remove sprigs before use.

Witches' Cold Brew - Iced Coffee Cocktail


I've always loved Witches.
The good Witches that is...
the ones that are pretty, kind and twitch their nose to make magical things happen.

This Halloween I've cast a bewitching spell on my cocktail creations.
A combination of sweet spirits and cold, brewed coffee.

then sprinkled with Sweet 'N Low and stirred.
I love using Sweet 'N Low in cocktails,
since it has zero calories, it adds the perfect flavor without the added guilt.
A witch has got to keep her stylish figure all year long!

Then pour your potion over ice...

The cocktail cauldron is not only sweetened with Sweet 'N Low,
 but with a witch's favorite accessory,
a Cinnamon Licorice Broomstick.

The broomsticks only take seconds to make, 
I whipped these up as the coffee brewed.

Cut a piece of black licorice into 4 equal parts, 
lay on top of a piece of kitchen twine then with a cinnamon stick.
Tie the string into a double knot, trim ends
and you are ready to take flight.

Witches' Cold Brew Cocktail
Makes 3 cocktails

3 cups brewed coffee, chilled or at room temperature
3 oz. vanilla vodka
4 packets of Sweet 'N Low or more to taste
3 tablespoons heavy cream

In a pitcher, stir together coffee, vodka and Sweet 'N Low until combined.  Pour into glasses filled with ice.  Add 1 tablespoon heavy cream to each and garnish with broomsticks.

and a sprinkling of Sweet'N Low into a cocktail shaker.
Sweet'N  Low adds the perfect sweetness, 
to the tartness of the cranberry and the crispness of the apple. 
I also love it because it has zero calories, and we all know how those can add up. 
I use it to reduce the calories in drinks and almost anything that I would put sugar in.

Cranapple-tini
makes 1 drink

1 1/2 ounces of chilled vodka
1 ounce cranberry juice
1 ounce apple juice
generous squeeze of fresh lemon juice
2 packets of Sweet'N Low

Pour all ingredients into an ice filled cocktail shaker.  Shake vigorously then pour into chilled martini glass. Edible Fall Foliage "Stir Stick" optional.

White Peach Margaritas



There is nothing better after a long day than sipping a lively cocktail.
I had a basket full of white peaches on my counter screaming for a fiesta so the 
White Peach Margarita was born!

This fruity, fun drink, 
paired with fresh tortilla chips and salsa fresca, 
and the worries of the day just floated away...

Luscious white peaches, fresh squeezed orange and lime juices, 
mixed with tequila then served "up" with salt...

but the key to my evening cocktail is 
With zero calories, it helps give my margaritas the perfect sweetness 
without the extra calories and it's diabetic friendly.

Even the piñata looks envious of my drink!


White Peach Margaritas
(2 margaritas)
2 Ripe White Peaches, peeled and diced (or any type of peach will be fabulous)
1/4 cup fresh squeezed orange juice
1/4 cup fresh squeezed lime juice
3 packets of Sweet'N Low
2 shots of tequila (or 3 oz)

Place peaches, juices and Sweet'N Low in a blender and mix until all ingredients are pureed together.
Add tequila and peach puree to a cocktail shaker filled with ice and shake well.  Pour into salt rimmed martini glasses and enjoy. (can be served on the rocks as well)

Blueberry Basil Bellinis for Brunch

What is is about Brunch?  It just makes me happy.
No one has to get up early, no one seems to be in a rush
and everyone is in a good mood
I love to make it festively bright and cheerful, 
and I think a signature drink is a must.

The key to my Blueberry Basil Bellinis is the puree...

It's bright, fruity, fresh and a touch of
Sweet'N Low keeps the calories low and the taste amazing...
Because it is a zero calorie sweetener, I love to use it in all my drink recipes.

Topped with Prosecco,
 it is happiness in a glass...


Any cheerful drink needs fun food to accompany it.
I am singing serving up, 
pancake stacks that are begging for you to 

"Pour some Syrup" on them...


and "cheeky song topped" quiches
that want you to like them as much as they like you...








Blueberry Basil Bellinis

for Blueberry Basil Puree
1 cup blueberries
3 to 4 chopped basil leaves
1/2 cup water
5 Sweet'N Low packets
3 to 4 basil leaves

In a small saucepan over medium heat, simmer all ingredients above for about 10 minutes. Cool slightly then puree in blender.  Let puree cool completely before mixing into beverage.

For each bellini:
Pour about 2 ounces of puree into each champagne glass and top with chilled Prosecco, Sparkling Wine or Champagne.  Garnish with blueberries and basil leaf and enjoy
