Blueberry Basil Bellinis for Brunch

I created my Sweet'N Low Blueberry Basil Bellinis as part of a sponsored post for Socialstars.

What is is about Brunch?  It just makes me happy.
No one has to get up early, no one seems to be in a rush
and everyone is in a good mood
I love to make it festively bright and cheerful, 
and I think a signature drink is a must.

The key to my Blueberry Basil Bellinis is the puree...

It's bright, fruity, fresh and a touch of
Sweet'N Low keeps the calories low and the taste amazing...
Because it is a zero calorie sweetener, I love to use it in all my drink recipes.

Topped with Prosecco,
 it is happiness in a glass...


Any cheerful drink needs fun food to accompany it.
I am singing serving up, 
pancake stacks that are begging for you to 

"Pour some Syrup" on them...


and "cheeky song topped" quiches
that want you to like them as much as they like you...








Blueberry Basil Bellinis

for Blueberry Basil Puree
1 cup blueberries
3 to 4 chopped basil leaves
1/2 cup water
5 Sweet'N Low packets
3 to 4 basil leaves

In a small saucepan over medium heat, simmer all ingredients above for about 10 minutes. Cool slightly then puree in blender.  Let puree cool completely before mixing into beverage.

For each bellini:
Pour about 2 ounces of puree into each champagne glass and top with chilled Prosecco, Sparkling Wine or Champagne.  Garnish with blueberries and basil leaf and enjoy
