but my husband always makes way too many mashed potatoes.
What's my favorite way to use all the left overs?
Mashed Potato Salad, of course!
All the nostalgic flavor of a classic potato salad,
with a smoother, creamier, totally addictive texture.
With just a few simple ingredients,
it only takes minutes to whip it all together...
It is so good I actually now beg him to make a double batch of mashed potatoes...

it's not just for picnics any more!
3 cups cold, leftover mashed potatoes
2 1/2 Tablespoons mayonaise
1 Tablespoon yellow mustard
1 cup celery, finely chopped
1/2 cup scallions, finely sliced
1 Tablespoon pickle juice
1 teaspoon fresh parsley, finely chopped
paprika for sprinkling on top
In a large bowl, mix all ingredients well, except the paprika. Cover and chill at least one hour, then top with paprika
