Opening Day Baseball Lunch

There is nothing my son would like more than for someone to
take him out to the ball game on Opening Day!
But since he'll be at school,
I've got the next best thing, a ball park inspired lunch.

A stadium "hot dog" is a
 rolled ham sandwich with zig zag mustard in a bun... 

I "bought us some" peanuts and Cracker Jacks, 

making this regular brown bag lunch into and All Star meal.

But I felt like I needed to add just a touch of color...

Just a little something Giant for the home team crowd...

but really, I'm not biased...

Bon Apetit, a Fun French Lunch

Ooh La La...

In my never ending quest to make lunch more fun, 

(or I might fall asleep making another peanut butter and jelly sandwich)

our culinary adventure has brought us to France...

Invision the school yard picnic table with a view of the Seine 

while nibbling on a baguette sandwich with mini Brie Cheese and sliced apple...

Then feast on "french fries" in true Americanized Parisian style...

(they are baked potato snacks)

and say au devoir to your meal with 

beautiful, sweet macarons...

Bon appétit!

Truth be told -

this cordon bleu quality lunch took one minute to prepare and

I got everything from one quick trip to the supermarket.

Sayonara to boring lunches

After 2 days of turkey sandwiches, 

I'm already bored with making my kids' lunches.

Creativity is always easier for me when there's a theme,
so tomorrow they'll take a little trip to Asia for lunch...

A favorite Ramen Salad in takeout containers...

Seaweed Snacks tied with a bow...

a sweet and crunchy treat...

and a fan napkin, of course...

Ramen Salad

makes 8 servings

1 bag (16 oz) of washed and shredded cabbage

3 scallions thinly sliced (both white and green portions)

1/2 of a red bell pepper very thinly sliced

3/4 cup light flavored olive oil

1/3 cup white wine vinegar

1/4 cup sugar

1 cup slivered almonds, lightly toasted

2 bags of ramen noodles crumbled, flavor packed is not used

In a large bowl mix cabbage, scallions and peppers. 

In a small bowl, whisk together oil, vinegar and sugar.

Toss vegetables with dressing, then add in almonds and ramen.  It gets better as it sits so often when I make it for lunch I do this the night before, cover with plastic wrap and keep in refrigerator over night.
