Chicken Wing Salad- My Back to School Lunch

As the school year approaches,
I have been thinking about quick and easy lunches...
for me!
Things that are light, bright and colorful to make the midday meal a little more festive.

Chicken Wing Salad is my newest fun feast,
and it goes perfectly with the new lunch box I bought for MYSELF...

It starts with a bed of small Persian cucumbers and thinly sliced shallots...

drizzled with dressing...

and topped with lemon garlic chicken wings.

I mean, really
is there anything that makes you say "Yay" to lunch like a fresh batch of wings??

Chicken Wing Salad
Serves 2

10-12 Chicken Wings marinated in the juice of 1 lemon, 1/2 olive oil and 2 minced garlic cloves
6 Persian Cucumbers thinly sliced (or 3 regular cucumbers)
1 shallot thinly sliced

Marinate wings for at least an hour then grill or bake until fully cooked and golden brown.  Toss cucumbers and shallots with dressing and top with wings!

For dressing whisk together
3 Tablespoons white wine vinegar
6 Tablespoons Light (in color) olive oil
1/2 minced shallot
1 teaspoon dijon mustard
1/2 teaspoon anchovy paste

Dill Pickle Chicken

My grandmother saved and repurposed almost everything in the kitchen.
Vegetable scraps for broths, bacon grease for frying,
stale bread for breadcrumbs (& feeding the ducks!)
but I never figured out what she did with the pickle juice she saved.

I thought of her the other day,
as I caught my husband about to pour the liquid left
in our empty pickle jar down the sink!
I saved it in the nick of time and made
Dill Pickle Chicken Wings...

I hatched a plan to brine the chicken in pickle juice,
then baking until golden...

I topped it with fresh dill and kosher salt
and we were ready to dive in...

So when in doubt, save that pickle juice and just wing it!

Dill Pickle Chicken Wings

2 lbs. chicken wings
2 cups pickle juice
drizzle of olive oil
3 Tablespoons fresh dill, roughly chopped
kosher salt

Place wings and pickle juice in a large sealed baggie and marinate in refrigerator at least 2 hours. When ready to cook, pre heat over to 425 degrees. Line a large cooking sheet with foil and cover with non stick spray. Drain juice and lightly coat the wings with olive oil.  Place wings on prepared sheet pan.  Cook 35- 40 minutes (turning wings after 20 minutes). To make them extra crispy and golden, broil 2 minutes.  Remove from oven, let cool a few minutes then transfer to serving platter.  Top with kosher salt and fresh dill.

Our Chicken Wing Ding

This shop is part of a social shopper marketing insight campaign with Pollinate Media Group™ and Wet-Nap but all my opinions are my own. #pmedia #showusyourmess  http://my-disclosur.es/OBsstV”

For my family, chicken wings are ALL about the sauce.
Everyone seems to have a different opinion of what kind is the best,
so over the weekend we had a big old
Chicken Wing Ding...

sauces for every taste...

slathered on to your liking...

and devoured...

Such and easy and fun dinner,
I got a big bag of chicken wings from the freezer aisle,
baked according to the package directions before dinner
and then heated them again on high, just before serving
(I think that "double baking" is the trick to perfect wings).

The best part of was the quick clean up.
We ate outside, used paper plates and had plenty of Wet-Nap® wipes on hand.
(and believe me, you need a lot of wipes!)
The Wet-Nap® packaging is so colorful and fun,
I love having them around.
(and they smell great)

Everything was available at Walmart and with their every day low prices
we will be chowing down on wings all summer.
