That's the way the Cookie Dough Crumbles...Thin Mint Sundaes


Last week, I had so much fun making
In the end they turned out great, 
but the first attempt was a slight disaster...
or so I thought.

Because I used cold butter, 
the batter turned out similar to the consistency of sand and would not stay together at all.
It smelled SO good though... and tasted exactly like a Girl Scout Thin Mint.

I knew I couldn't use it for cookies,
 but I was not about to throw it away.


So the 
Thin Mint Ice Cream Sundae 
was born!

Step One...
Vanilla Ice Cream


Step Two...
Hershey's Chocolate Syrup


Step Three...
Thin Mint Batter Sprinkled on top

Thin Mint Sundae Sprinkle Batter

2 cups sugar
1 cup unsweetened cocoa powder
2 cups all-purpose flour
1 cup cold unsalted butter, cubed
½ teaspoon kosher salt
¼ teaspoon baking soda
1 tablespoon heavy cream
1 ½ teaspoon peppermint extract

In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, butter, salt, and baking soda and beat on low speed until it resembles cornmeal. Add the sugar, cream, and 1 teaspoon of the peppermint extract and beat until just clumped together.
