The Duke of York-shire Pudding

One of the highlights of Christmas is our 
Prime Rib and Yorkshire Pudding Dinner.
After this year, my father Bob, 
has officially been named the 
Duke of Yorkshire Pudding.
They were absolutely perfect!


The only mistake was not making enough...





I don't have any pictures of them on the pretty serving dish 
because they were gone so fast.


Bob's Yorkshire Pudding

The Batter
Sift 2/3 cup flour into a bowl
Make a well in the center, add 2 beaten eggs with salt and pepper
Slowly whisk 2/3 cup milk into the center, 
drawing in the flour to form a smooth paste
Stir in 3 tbsp water
Cover and let stand at least 15 minutes 
to allow the starch to soften so the batter is light

The oven heat should be 450 degrees
Pour about a teaspoon of fat (preferably from Prime Rib!) 
into each of 12 muffin cups
Heat the muffin tins in the oven until very HOT, about 15 minutes

Pour in the batter to half-fill the cups.  
Bake in the HOT oven until puffed and brown, 15-20 minutes

  3. Last time we made Yorkshire Pudding they looked AND tasted like hockey pucks. I know there is a science. Way to go Bob! xo, CTL

  4. I love Yorkshire Pudding! Every year my husband cooks a prime rib roast over at my mom's house, and my mom brings out her popover pans, and then we sift through a pile of recipes, try one, and decide to try a different one the next year. Yours looks like a keeper! I'm printing it out and tucking it in a safe place for the next time we dine at my mom's. Why wait until Christmas to try it out, right?
