Peggy's Cucumber Salad


Growing up my mom always had a cold cucumber and onion salad in our refrigerator. 
She was a working mom and became the queen of quick, simple, go-to dishes.
Looking back I realized, that it's the perfect simple, healthy snack 
or a dinner side dish that compliments almost any cuisine.
Imagine my surprise when I saw Peggy's famous salad on Sweet Paul's website!

I hadn't had the salad in a million years and it is just as good as I remember...

The cucumbers are cool and crisp, the red onion flavor mellows as it soaks in the dressing 
and the fresh dill keeps it bright and fresh...

Guess what is always sitting in our frig now??

Peggy's Cucumber Salad
1 large English Cucumber or 6 small Perisan Cucumbers, peeled and thinly sliced
1/2 small red onion, thinly sliced 
1/2 cup white wine or rice vinegar
1 Tablespoon Sugar
3 Tablespoons fresh dill

Place cucumber and onion in bowl.  In smaller bowl, stir together vinegar and sugar until sugar is dissolved, then add dill.  Dress vegetables with vinegar mixture and chill in refrigerator at least an hour prior to serving.
