Chicken Enchilada Salad

Hold on to your sombreros,
 because this is the easiest recipe ever!

My family loves Enchiladas, 
this quick healthy salad is a fun and simple alternative...

So good, so easy and such a crowd pleaser...


To make this salad for 4 people:

I poached 3 boneless skinless chicken breasts
(but a store bought rotisserie chicken would have been great too)
2 heads of Romaine lettuce
1 avocado
3 chopped green onions
4 small corn tortillas
one bag of Kraft Shredded Mexican 4 Cheese
and...
one box of
Verde Chicken Enchilada


I have to fill you in on
They come in seven delicious varieties.
(like New England Pot Roast, Chicken Bruschetta Pasta, Sweet and Sour Chicken...)

Each come with two savory sauces,
 that you simply add to your fresh ingredients 
for a flavorful, homemade dish any night of the week.
(they even give you 3 different recipe ideas on each box)

So many possibilities, so many options, 
so easy that I can get it all at Safeway, so many great dinners I can make in a snap!!
(also readily available at VONS, Pavilions, Randall's, Tom Thumb, Carrs, Dominick's)

I went "off the box" in doing my salad only because we wanted something really light for a recent summer lunch. 
All the suggestions included with the Verde Enchiladas sounded amazing 
and are on the list for future dinners...

Now, back to my recipe!

I mixed the chicken with the enclosed Creamy Ranchero Filling Sauce, 
and sautéed it for a few minutes in a pan to infuse the fabulous flavors of the sauce...

I fried a few corn tortilla strips...

and then placed the lettuce, avocado, and cooled chicken on a platter.
I drizzled it all with 
the Kraft Recipe Makers Tomatillo Finishing Sauce
(yikes, it is SO good as a dressing...)

topped it with cheese, green onion and fried tortilla strips.
That is it!
I can not explain in words how flavorful it was,
all the tastes of an enchilada in a refreshing salad...
